It's weird I always thought that he did die at the end of the game, you have Yuffie there looking up kinda whiningly saying "Vincent!?" and you never see him...all you see is the purple lifestream going down (I presumed that was vincent instead of just the chaos gene). Now that I think about it...

Espers are always available throughout the game, the Zodiac Spear is still available even if you opened the chests but I think its a lot harder. I havent tried it but I've heard people say that it can drop in the henne mines (I'd suspect the area where you have to pass through to get to Zodiark).
