I've beaten Yunalesca, and now I'm on the Airship with freedom to go anywhere. I never did the Chocobo Training miniquest when I was at the Calm Lands, and now I need to do it in order to get the mirrors to obtain the Celestial Weapons. However, the Chocobo Trainer won't talk to me! Or he just says something about how smart he is because he rides a Chocobo in these dangerous lands and then doesn't initiate any kind of option for me to train those animals! This is the right guy, isn't he?

Yeah, all I could find at first was the guy who shows you the way back to Bevelle. The chocobo trainer is near the entrance to the calm lands from Bevelle. Just keep talking to her and she'll give you the option to train a chocobo.
Wrong people, when you get the airship, go back to the calm lands and the chocobo trainer is near the entrance to the travel agency, that should make things easier
