Some quick questions that REALLY need answering:

1. Drawing Demi: Stock or Cast?

2. Ways to beat him besides using Demi?

3. What levels/HP should squall zell and selphie be?

4. Does he level up with you so that the battle is the same difficulty? because I swear he did that in the PC version...
 
1. I suggest you cast, same with cure.

2. Aside from demi you could get your character's hp low enough to get limit breaks often and use that, otherwise barrage him with spells.

3. Level doesn't matter, though I suggest above 1000 hp so junction something good to it.

4. Yes, like all monsters and bosses they level up with you so junctioning is your best bet to even up the odds.
 
Diablos is fairly easy to beat. Since you can draw blind from him, just draw it and cast it on him, then he can't attack you physically. As his other attacks consist of percentage attacks only, i.e. 1/4 of HP etc, he can't actually kill you.
 
If I remember correctly, stocking and then casting Demi on him will make him use Curaga on you. This is rather hard to do with anyone but the person who has... Queztocoatal, (or whatever the thunder GF thingie is) I'm pretty sure he has the magic junction, should be able to draw a bit at least. I've always got him junctioned to Squall and I suggest taking advantage of Selphie's limit break, Full Cure is a lifesaver sometimes. Zell's limit break isn't bad either, it just deals damage instead of healing you if you need it.
 
Drawing Demi can be a pain, but if you can, stock it instead of casting it. Basically, once you stock them, you can't fail to cast them, unlike if you're trying to cast it straight up. I use physical attacks otherwise. When he uses a Gravija, I'll immediately use Squall and Zell's Limit Breaks, then follow them up with a Full-Cure by Selphie. With this method, he should fall fairly quickly. This is also if you're using the Magic Lamp before you have other party members (I always use it immediately). And for your question on Diablos leveling with you, that is true, he does level with you. I think he can only max out at level 65 or something though, but early on he'll be relative to your party's level.
 
Fighting him as soon as you get the item that he dwells in worked for me. I just let him use gravija and lowered my health to critical levels and spammed limit breaks (Rough divide was all I had with Zell's Beat Rush and Selphie using -ga spells triple) I beat him relatively quick. Good Luck :)
 
the only thing you must keep in mind is that you musnt level too much up coz if you do thenm he will leven up too, I tried too beat him when I was lvl 70, and believe it was one hell of a job, the same goes for bahamut, If you challenge him when your low at level, he will be so easy that its fun, and you can draw demi as much as you like :)

Two ways to win

Stock Demis. Or if you want to wait until you can draw the spell of a normal monster that works. Each time you cast it on him he'll cast curaga. So yes if you have no Demi spells stock up. Blind works but I've never really tried it. It would make the battle so easy though. Since all of his other attacks are gravity based and can't kill you. So...

Stock and cast demis
Or
Blind him and use limit breaks
