Super Fighting Robot‼
Unfortunately I don't get around to watching anime that isn't shown on Cartoon Network since I'm so lazy about it, but my two favorites are definitely Neon Genesis Evangelion and FLCL.
NGE is a classic, and widely regarded to be an exceptional series. If you haven't seen it yet, you owe it to yourself to check it out at least once. The first time I watched it, the first couple of episodes had me going "Oh, cool, a show about kids piloting giant robots who fight monsters. Okay." But as it progresses, it becomes something far different (though the kids still pilot giant robots and fight monsters). And, of course, watching the movie End of Evangelion is a must with this. The other movie not so much, since it just summarizes the series. I would recommend, however, that if you watch this that you spread it out. I once did a marathon where I watched the series and the movies within a span of a day or two and I was depressed for a month afterward. And now that I think about it, I haven't watched it since then 'cause I'm afraid of getting super depressed again... But it's still a favorite.
FLCL is incredibly short--only six episodes long--but it still manages to tell an interesting story (that you'll probably have to watch the series two or three times through to fully understand). It's silly, wild, and at times very nonsensical, but it's a sure source of entertainment. Also, I love the animation. It's very colorful, energetic, and although a bit cartoony at times, I've always felt it to be nice a fluid.
While those two are tied for first, I'd have to say that second place goes to Cowboy Bebop. Big O and Trigun are two more that come to mind, too. Also, I should really look into seeing if Kikaider exists anywhere on the internet... it used to be on many years ago, and I remember thinking it was pretty neat.
