Definitley Emerald Weapon.
I would have to say that honor goes to ruby weapon. He was the biggest pain-in-the-ass for me to kill. Damn him and those arms of his...........
Omega from V. Both physical attacks and magic did zero damage on him. Only one of my items did any damage and I only had one of them.
Many of the bosses from IV were tough.
Also Chaos from I. My knight and theif had been doing max damage of 999, but when I finally got to him they were only doing about 100 damage each and Chaos had 4000 hp. My black mage kept casting flare which did 500 damage. And then half way through the battle he completely healed himself and my black mage was out of MP.

to me it has to be ruby weapon and yiazmat because thay are both almost impossible to kill
