I've only played Soul Calibur and Tekken, and I can't say they're that different. They have the same basic dynamics. However, I was addicted to Tekken! I loved to play through all the stories, and just preffered the general combos (I had the PSP game). I'll vote Tekken! 
I would, however, like to note that Power Stone is another great fighting game! It's a little different to SC and Tekken, and not AS good as either imo, but still good fun.
