In the town you have to buy dry meat. This is needed to gain a new character, Gau. When u see him, throw a dried meat and e will join u. He will lead u to a cave where u have to walk around a bit and he will dig up the helmet.

Yeah the materia system for me was the most straightforward. There u could choose what magic u wanted. And the materia combos were easy to make. I found that levelling materia was a good incentive to keep playing the game and at the same time u could level the team.
